That goes first because it matters. Overripe sour cherry and raspberry, a little raisin, generous and soft, with a long finish that leans toward molasses and treacle. If you find most reds too sharp, this is the one.\u003c\/p\u003e\n\u003cp\u003eAn easy, comforting pour for the end of the evening, when the plates are cleared and nobody wants to move.\u003c\/p\u003e\n\u003cp\u003eThe sweetness is not added. The fruit is picked late and grown between 350 and 550 metres, and altitude plus a late harvest is what concentrates the sugar. It ferments in concrete and then spends a year in wooden barrels. Concrete rather than oak is deliberate.
